Going Gluten Free

We kicked off this season of Wellness Wednesdays strong on November 13th. Chelsey Jackson, RD, LD, presented a captivating session about gluten-free diets. Her presentation provided insights into gluten, its impact on health, and practical tips for managing a gluten-free lifestyle.


Chelsey explained that gluten is a protein found in wheat, barley, and rye. A gluten-free diet is essential for those with celiac disease or gluten sensitivity. Celiac disease, an autoimmune condition, damages the small intestine when gluten is consumed. Symptoms can include abdominal pain, bloating, and chronic fatigue. For those with non-celiac gluten sensitivity, symptoms might overlap but lack definitive diagnostic tests.


Chelsey emphasized that going gluten-free is not inherently healthier for everyone. While some perceive it as a trend, she clarified that gluten-free processed foods can be higher in fat, sugar, and calories and often lack essential nutrients like fiber and B vitamins.


For those who require a gluten-free diet, she shared practical tips:

  • Focus on naturally gluten-free foods like fruits, vegetables, lean proteins, and gluten-free whole grains like quinoa and brown rice.

  • Be vigilant about reading food labels to avoid hidden sources of gluten.

  • Prevent cross-contamination in the kitchen by using separate cooking tools and appliances.
